Foundation Notes Chef Pablo's Menu for Benefit Dinner

The planning committee for the Garrett College Foundation Scholarship Benefit recently released the dinner menu for the Great Outdoors fundraising event to be held Saturday, April 20, at Chanteclaire Farm. Chef Pablo Solanet of FireFly Farms created the carte du jour which he will prepare with local and regional farm-fresh products.

Diners will be offered an artisan cheese display with assorted crostini; a choice of three salads; roasted quarter chicken with lemon, rosemary, and garlic sauce; roasted brussel sprouts with bacon and caramelized onion; roasted carrots with fennel; sweet potato mash; and apple cobbler with vanilla ice cream.

Pablo, a native of Buenos Aires, Argentina, holds a Culinary Professional (CCT) and Pastry Chef certification from L'Academie de Cuisine in Gaithersburg. He held chef positions in some of Washington's finest restaurants before moving to Garrett County to develop his considerable culinary career in artisanal goat cheese making at FireFly Farms. Pablo’s cheeses have garnered top international and national awards.

The Great Outdoors benefit will also include cocktails, entertainment by comedian Mike Burton, and an auction featuring Garrett County adventures and experiences. Proceeds from the event support Garrett College Foundation scholarship funding.
